Winter varieties are hardy and can withstand colder temperatures, this is called over wintering. They are sown later in the spring or early summer and harvested from late autumn through winter.

Requiring attention to detail, it's important to plan before you start growing cauliflower to give them the best chance of surviving until harvest!
Cauliflower thrives in rich, well drained soul that has plenty of organic matter. It's important to keep the soil constantly moist but not water logged. Watering regularly ensures it has plenty of moisture to grow properly.
It's also worth adding compost or a ferteliser to your pots to encourage growth. Some cauliflower varieties require blanching to keep the heads white and tender. When heads are about 5-8 cm in diameter, gather the outer leaves and tie them over the head to protect it from sunlight.
